COURSE  INSTRUCTION

Susan Diana Edgcumbe (known as ‘Di’) was born and grew up in Nairobi, Kenya before moving to Durban, South Africa in 1969, where she has lived and worked ever since.

She started cake decorating and working in sugarcraft in the late 1970s, and in 1981 won her first award in Floral Sugarcraft at the Illovo Show, South Africa’s biggest and most popular annual cake decorating and sugarcraft competition. Over the years, she has made the Floral Sugarcraft category her own, winning first place 28 times with ambitious and large exhibits, such as 2012’s two-metre tall Bombax tree. In 2011, she entered her first overseas competition, winning first place in the ‘Category L, Miniatures’ at the Birmingham Show in the United Kingdom.

Di has taught sugarcraft as an invited demonstrator at South African Cake Decorators’ Guild (SACDG) branch workshops for well over two decades, and last year demonstrated at SACDG Sugarcraft 2013, the Guild’s national show in Pretoria, South Africa.

Di has also taught sugarcraft, cake decorating and icing technique in a formal capacity at various chef schools in the greater Durban area for the last 14 years. She taught at the Chantecler Chef School for six years, Zen Africa Chef School for four years, and at the 1000 Hills Chef School, where she continues to teach, for the last ten years.

Di has been a member of the SACDG for over three decades, and served as Liaison Officer for KwaZulu-Natal province from 2002-2008.
